I'm psyched you may be coming home for thanksgiving! Little Joe asks me every day if i'm coming, then proceeds to ask me if you're coming. Also, green beans take hardly any time to sauté, and you can throw in onions (delic), tomatoes, tofu and anything else you like.

That is an awesome idea, thanks! Sounds delicious and not time consuming at all.

I would recommend a slow-cooker (crock-pot) for tasty, easy meals. With a slow-cooker you load all the ingredients in the morning, turn it on and when you get home you have a fantastic meal. My favorites are:

Potatoes, carrots & roast beef
Broccoli cheese soup
Barbeque chicken

Googling any of these with slow-cooker or crock-pot will get you a handful of recipes.

you could always make a soup on the weekend. then it's easy to heat up for a quick dinner with a grilled cheese or some naan bread during the week. i like indian tomato soup best. breakfast for dinner is also a quick and excellent option.
