Leftovers

Now that I have job again, I rarely find the time to cook dinner. Although I love going to restaurants, I have been spending far too much time at them lately. I’ve been trying to find some good resources for ideas on cheap quick meals that don’t taste like crap. I’m somewhat sick of breaded chicken and pasta at this point, and don’t really want to enter the world of frozen dinners. Any recommendations are appreciated, although I may not ever get to try them out if I don’t reorganize my schedule.

Speaking of food, the holiday season is coming up, and I am overly positive this year. Generally, I take a scrooge approach to the holidays for reasons I will never know. This year I had a good birthday and actually celebrated it for once, which made me realize being a grump is pretty lame. So, despite the ridiculously high cost of flights for the rest of the month, I am still thinking of going home for Thanksgiving. I owe it to myself and my family as I haven’t attended a Thanksgiving at home in quite a while. I’m most excited for candied yams.

you could always make a soup on the weekend. then it’s easy to heat up for a quick dinner with a grilled cheese or some naan bread during the week. i like indian tomato soup best. breakfast for dinner is also a quick and excellent option.

i can’t do cheese anymore sadly. it kills my stomach. breakfast for dinner is an option i frequently forget, but definitely possible.

I would recommend a slow-cooker (crock-pot) for tasty, easy meals. With a slow-cooker you load all the ingredients in the morning, turn it on and when you get home you have a fantastic meal. My favorites are:

    Potatoes, carrots & roast beef
    Broccoli cheese soup
    Barbeque chicken

Googling any of these with slow-cooker or crock-pot will get you a handful of recipes.

That is an awesome idea, thanks! Sounds delicious and not time consuming at all.

I’m psyched you may be coming home for thanksgiving! Little Joe asks me every day if i’m coming, then proceeds to ask me if you’re coming. Also, green beans take hardly any time to sauté, and you can throw in onions (delic), tomatoes, tofu and anything else you like.
